We have been using Coinbase Commerce for a very long time, now they charge a‌ 1% fee on each transaction but still they work stable and solid for our needs.‍

I use my own one built by myself.

That must've‍ filtered out people who don't want to pay in Bitcoin and would instead pay in⁠ other crypto coin.

Mostly from scracth. But even everything built from scratch contains‍ some re-used open source components. Hence, a mix.

Got recommend BTCP server from this forum a while back, took me some time to‌ get it up running but it works nice and I'm not depending on any gateway.‍

Few of these are KYC mandatary (bitpay, binance...)

BTCPay Server is probably the best option, self hosted, full control over your assets, keys‌ and server with no risk of freeze, reporting or transaction censoring.

BitPay s**t s**t (the‍ worse).
Coinbase is s**t (Paypal 3.0)
