Why not consider ZEC or Dash? It's not anonymous by default, but almost every major crypto exchange accept them.

I guess so, if even delisting it from all big exchanges didn't kill its price. I still prefer Litecoin or Dash for day-to-day payments.

XMR is not banned, It is a currency with private properties, so some CEX (Centralized Exchanges) are removing pairs because transactions are quite anonymous, you can use XMR in the DEX (Decentralized Exchanges) and P2P world.

This just proves that they can't , otherwise why would they want it delisted?

They can't trace most of them, the famous video only depicts a very specific scenario.
