If I have a document apostilled it needs to be with a governement office.
They will review the paper and put the apostille.
Will they then tell the tax office what they just read?......

in my experience from three EU countries - NO WAY
not mentioning that it's not their business to read the doc - they are simply supposed to verify the signature/stamp on the document and add the apostille
They are simply apostilling the document. They will definitely not share any information or even concern themselves as to what the document relates to.
Apostil is just a verification of the signature of a public officer essentially, so no it's not their job to read the document nor will they read the document
