These are derelict buildings in bad locations.
In France, for example, for an asking price of 1.6m you get this 3000sqm castle with 26ha of land:

Not much. Probably 200k to make it perfect, 50k to make it good.

These buildings are solid, when you buy high quality you don't really need to spend a fortune in maintenance.

And remember, living in peaceful 26ha in the countryside will save you big hospital bills later.

How do you stay out of French tax net by having a permanent house available to you there?

Need to account land tax that could be substantial for that big size land depending on location and if construction is allowed.

If low land tax then you are in a middle of nowhere and you may die before reaching the next decent hospital.

Out of that, yes peace, calm and space are definitely priceless.

all that and...
not sure if this is the case in France but many countries "protect" valuable historical buildings by law.... which means you're not only limited in what you can do with your property but also obliged to keep it in certain condition

This is a right thing. You don't want to see a beautiful castle transformed into a minimalist monstrosity.

Are all the wealthy people leaving France, just like they are leaving England and Norway? Or is it something else you're referring to when you say these castles are being sold cheaply?

You could also look into the SASU a bit more costly to setup.

Or split activities. Micro enterprise up to threshold and remaining on a SASU. if you have 2 DIFFERENT activities.

as of today 30% on micro enterprise is unfortunately not that bad.

(I'm not a tax advisor, do your due diligence)

Why not reroute the earnings via a seychelles ( partner)company get paid via crypto for a percentage?

Sounds like it could be a new niche. Transforming French châteaux into eco friendly, CO2-neutral homes by insulating them and equipping them with solar panels or other renewable energy sources, so the costs of running a château are on par with an average household.
