Can someone elaborate how exactly the process of renting flat for 1 year in Dubai works?

You need to be resident (have Emirates ID).

Find what you like, sign a contract, write checks (usually 1,2 or 4 checks) and check for security deposit.

With the contract you go and get it registered and get an Ejari and also switch DEWA into your name (water/electricity) and another 2.500 AED deposit.

That's about it.

you only get that if you have a company duly registered in the UAE right ?

no, you have many options for getting emirates id. (to name a few: freelance, remote worker, job, own company, golden visa by real estate etc).
Uae freezone company used to be one of the most popular routes.

You can take a flight there and apply for a emirates ID in person or you need to have someone local with you ?
 
If someone gets a golden visa but fails to go back within an year do they automatically cancel it or that is not actually enforced?
p.s. officially you have to visit at least once every year to keep it, but no idea how strict they are on this?

AFAIK there is no such requirement for Golden Visa Holders

There are no entry requirements with a golden visa
