Whats the best offshore place for internet companies to be anonym and have no problems with the violation of the laws?

I dont wanna do illegal activities. I wanna sell only products and services.
But im from Europe and laywers scan all onlineshops and websites automatic with a bot and if its not confirm, they send automatic a blackmail that you have to pay money otherwise they go to court. Its cost all the time money to hire a laywer to be up to date so my idea is, if the company is registered in an offshore country like Nevis they︀ dont send me blackmails.
