In todays connected world disconnecting from the grid as you said isn't easy task. I'm sure you've read or know about not using electronics and other digitally connected devices.
It really depends what you mean by being invisible. You can be invisible as say a "nobody" - not earn any significant income but pay your taxes, not hold any significant positions or connected to power, not have any substantial assets, not voice your political opinions loudly etc.
When it comes to the Internet itself invisibility means something else and I do specialize in that, regardless of reason. Like many things it isn't a state but a process wrapped with security, anonymity & privacy.
