FINCEN is still collecting for the supposed March 21 deadline but will not enforce the law pending changes of some unspecified sort. Even for the US, that is so vague that it would be impossible to enforce.
As long as Trump is in power, I’m pretty sure they’re not getting rid of BOI or CTA again. The real question is how long you actually need a US LLC. If it’s just for a few years, you can definitely set it up and stay anonymous.

With the new regulations in the U.S. protecting BOI, it should once again be possible to set up a near-anonymous company, at least in the sense that the public won’t have access to the information, and authorities︀ can’t just run a broad Google search and instantly find your name linked to a︁ U.S. company.
