Nominee Service or HK Company with Nominee

Hello folks,
I'm really happy to be here and to learn from all of you, but despite everything, I have concerns that you might be able to help me with.
I would be very grateful for any feedback.

About me, I live in Europe (DE/AUT) and am currently doing dropshipping and am looking for a concept where I can do business anonymously with a HK company in the form of a nominee.
1. I have already written to some people on Discord and Telegram who offer such a service where they set up a nominee company for you, but their prices increase from conversation to conversation or would like to have ID from me with video proof.
Do any of you know a reliable agency or one that puts you in touch with nominees so that you can work out with them what you want to do?

2. Are there ways to get in touch with Payment Processing Paypal, Shopify Payments, Klarna, etc. providers or find insiders with whom you can open anonymous accounts without becoming conspicuous or also open them on nominees.

Is it possible to remain completely anonymous with the strategy or do I have to initially reveal data about myself that I then change? That's how I understand the concept.?
