Hello guys,

I'm thinking to move for some time from Hong Kong (where mostly I don't pay taxes) to Europe.

Probably fro more than 180 days, so I'm guessing my HK banks won't report me to the tax office but there's a way they can end knowing my business activities and try to tax me?

I doubt you have anything to worry about with HK if you leave everything running over there. The issue is in Europe where if you move to the wrong country you would need to declare your worldwide income and sometimes even assets. The European country will know which country you came from i.e HK and if they have a DTA with HK then......😕.

That's the problem... I'm thinking to keep doing the tax return in HK like if I was living there and don't register any company, or any tax declaration on the host country. Stay out the radar for the tax authorities. Sadly they might know I'm resident though the port entries

You could apply for a 90 day schengen visa every 180 days. Then just move around Europe freely from airbnb to airbnb. It also means you can stay up to 180 days in Europe in any 1 year.
