You only need to KYC when legally obligated (financial / corporates services etc.), you dont need to KYC if you're just selling normal stuff (some extremely minor exceptions obv.)

I believe this was 2018 when they started CRS reporting. More or less the final nail in the coffin.

Tails is nice but I recently switched to using whonix which uses a double virtualization technique (just don't use the virtual machine on a windows PC of course). It's also a bit easier to use imo (no need to reboot).
