I heard about the 3->2 year change. Why can't I simply renew the visa before it expires? If my visa expires what happens to my business account? I'm assuming the account won't get shut down as long as I file tax and pay the yearly license fee.

I don't think so. They will be puzzled how you entered the country. They will normally ask for your other passport and if you can't produce it there's a problem. They don't instantly jail you for giving them wrong documents.

If you are caught with police as an expat it's a no win scenario for you. It's the same in every country. As for Sharia, as a man I find this much preferable to Western family courts. Before going to any country it's best to look at risk vs reward and decide, no country is perfect.
