Wanting to setup offshore company for hotel booking business (like agoda), so need bank accounts, internet banking, credit card etc I was wondering why I would need a merchant since there are many providers like stripe etc. that don't require you to have your own merchant account.

Also curious as to what is better? hong kong or singapore or finally which is the most reliable company to set this up with?

You don't need a Merchant account, use Stripe or 2co to get started and build your business.

If Hong Kong is supported by Stripe and 2co I would setup a HK Company, even better would be to setup a St. Kitts corp which is way cheaper and easier to setup and still can be used for the mentioned processors.
 
2co requires a lot of paperwork and previous records. I am setting up a new company so that's hard. It doesn't seem like strip supports St. Kitts
 
Stripe will require the same documents as 2co does!
 
You can setup a company in St. Kitts and Nevis or in other jurisdiction accepted by 2CO.

OP did you find a so called anonymous payment processor that is accepting your offshore company for the opening of a business merchant account? I would like to know?
