Let's assume that two cards are added to Apple Pay - my personal card and a friend's card. Is it safe to use both cards for payments without the risk of these payments being linked?

Specifically, can the two cards be linked if:
  1. Both are used to pay the same merchant,
  2. They are used at different merchants utilizing the same processing bank,
  3. Payments are made within the same country (different processing banks)?
From the information available, it seems that Apple Pay generates separate tokens for each card, which cannot be linked. However, encryption certificates are also transmitted during transactions, which could potentially be linked to the same device.

apple knows. And phone / camera etc surveillance.
 
Banks will see the terminal where payment was done, and that it was done through Apple Pay.

If there is no reason to cluster your transactions together, they won't assume they are both the same device/person.

There are two points:
  • inflating his post count
  • he has a card on the name of his sister's brother in law that lives in the BVI and that officially owns all his money that he is not paying tax on in Germany. now he needs a way to spend that money without him getting caught.

Probably used for behaviour analysis purposes, so the transaction can be tied to Apple Pay or a legitimate Apple device. But the data concerning the specific Apple Pay user resides with Apple only.

It's used to check if it's a genuine apple product . They can't find out the specific model/device for it .
But the merchant or the seller can always append device specific metadata .
You shouldn't worry about apple , you should worry about analytics/anti-fraud(riskified, Signifyd) solution providers .
They will 100% link every payment to your device .

If its different banks, the banks wont be able to link the transactions but apple will always be able, but if there is no reason for suspicion, it shouldnt be bad
