I'm looking for a service that allows me to use crypto VCCs on APPLE PAY without KYC.
Do you know this type of service?

Because I don't want to pay taxes on it and it's to avoid any problems.

He will find but there is always a risk of the service stealing the funds. A real no kyc doesnt exist. Its always the data of someone else being used for kyc. Sometimes this someone else agrees and sometimes not. If the person doesnt agree there are even more risks.
